A quick salad that’s also a complete meal
Using two types of canned beans to create an interesting, tasty, and nutritious salad.
Rotem Liberzon takes kohlrabi and red onion and loooooots of herbs, adds canned beans on the way to making a quick and perfect salad.
Ingredients:
A whole kohlrabi, peeled and grated
A bunch of arugula, coarsely chopped
Red onion, thinly sliced
White and brown beans, drained
A whole bunch of cilantro, finely chopped
Zest of one lemon
Juice of one lemon
Olive oil
Salt
Crushed hot pepper to taste
Preparation instructions:
Mix all the ingredients together, season as much as you like (it’s best to start with a little seasoning and increase the flavors as needed), and serve.
